Spoiler free explanation:
Titans are generally split into two categories based on their behavious. The "normal" ones that have very predictable behaviour and thus are comparetively easy to deal with (in small numbers and by well trained and experiences soldiers anyway).
And then there are the much rarer so called "abberant" Titans. They are utterly unpredictable. They might single out specific Humans instead of going after the nearest "snack". They might even watch Humans without attacking for hours and then out of the blue eat just a single Humans and then wander off or keep watching the others. Or they might suddenly start to walk on all fours or sideways without any apparent reason. They are utterly nonsensical and unpredictable.
Unfortunately there is no way to differentiate these two kinds by looking. You only know you’re dealing with an abberant when it starts to behave abnormally… assuming you survive the first abnormal act.
One of the main tactics against Titans is to have one soldier (or more, if their numbers allow it) flit around in front of their eyes just out of reach as bait, so the Titan will only look at them. This allows other soldiers to circle around behind the Titan to go after the vulnerable area at the nape of the neck.
As long as you’re not dealing with multiple Titans concentrated in a small area, this is pretty much guaranteed to work against normal Titans.
But due to the abnormal behaviour and general unpredictability, this is far from guaranteed to work on abberants. They might take the bait, they might just stand there and do nothing, they might turn around just for the heck of it… you just can’t tell. And that’s what makes the abberants particularly dangerous, because you can never tell what how one of them will react.
While it was never witnessed before at that point (or at least no one who did lived long enough to talk about it), it is theoretically possible that this erratic behaviour could also include attacking other Titans.
And then there’s the Colossal and the Armoured Titans who seem to behave intelligently. Those two fall in neither category and are complete enigmas to the Humans, especially how they can just appear seemingly out of thin air and then disappear without a trace in a matter of seconds.

As you suspected in your reaction to the openings, first two seasons are *very* action-oriented; there is character development, of course, but season three does what seems like a 180 and focuses very heavily on the world and the characters, as opposed to action. That’s not to say the action disappears, though! Very glad you’re reacting to this series, it’s clear you’re already in love with it.

This episodes actually show less gore than the OVAs because like these have to air in the Japanese television while OVAs don’t really air on TV and are only found on the internet. Remember the scene from No Regrets where Levi’s friend’s intestine was literally falling apart from his body

Regarding the "They go from that music… to this moment:
"Keep your weapons aimed. Here comes the chilling phase. Crushing down your fears. Jump on the necks of monsters.
You can’t hide yourself, you can’t run. We are fighting for our lives. And we just can’t lose again.
There’s not much time, be ready to fight. Do it."
That’s part of the lyrics of the song playing during Mikasa’s charge before she runs out of gas. Musically inspiring, but already with hints of a not so gentle reality strewn in. This isn’t so much a "We are invincible, let’s do glorious battle" kind of song, but a desperate call for everyone to give it their all or they’ll be annihilated. Though the biggest giveaway is the title of the song: DOA (Dead on Arrival).
I really like the sort of progression you can have with the music of this anime.
You start out of the opening theme "Guren no Yumiya" which is a real battle hymn getting you pumped up for a maybe costly but surely glorious, just and eventually victorious battle.
Then comes the above mentioned DOA, which while still inspiring, already begins to show how scary it’s going to be and that victory might be far from certain.
Next up comes "Reluctant Heroes" where the courage starts to waver ("It was like a nightmare and it’s painful for me ’cause nobody wants to die too fast" "Song for reluctant heroes, oh give me your strength, our lives are so short. Song for reluctant heroes, I wanna be brave like you").
And finally you end with the depressing and hauting songs like "Bauklötze", "Vogel im Käfig" (this is the song that played in episode 1 when Eren’s mother was eaten) and "Call your name" ("Oh, where is my lover, I don’t have the power. I’m standing alone.") for when you are mourning your losses and the general hopelessness of the situation.
